cabbage cortido.

Cortido

is it me or do all the fruits and vegetables seem to simply hum with flavor this year? i really need to get a rolling cart so i can load up with even more delights at the farmers' market. i bought some regular old cabbage yesterday and since i made chili for lunch, i was trying to think of a nice accompaniment to it. i remembered cabbage cortido, a side dish served along pupusas. i tried it only once, but really enjoyed it. i searched and found this recipe, which i adapted a little. it's super, super spicy, so i may have to add another head of cabbage. it's quite easy to make and we'll bring it to a bbq next weekend. hopefully, it will tone down by then!

that looks great - I am going to have to try it. I have been way into cabbage lately. My favorite recipe is from the 3 bowls book - do you have that? If not I will email you the recipe. It's a walnut slaw with sesame, tamari, etc. Very good.
